Ingredients for 4 people:
- 320 g of Pastificio di Martino tortiglioni
- 400g Diced pumpkin
- 1 shallot
- 1 sprig of chopped parsley
- Extra virgin olive oil
- Salt and Pepper To Taste
- Speck 200 g in cubes or strips
- 10 walnut kernels
Method:
Peel the pumpkin, pass it under running water, cut the pumpkin into cubes, and slice the shallot finely
Fry the shallot in a non-stick pan, add the diced speck, brown for a few minutes, add the pumpkin, salt and pepper
Bring to cooking, stirring occasionally, add a ladle of water if necessary
Cook the tortiglioni in plenty of salted water, drain when al dente and sauté the pasta in the pan with the sauce
Finally, add the chopped parsley and walnut kernels, mix well, and serve.
