PASTA SALAD
Pasta salad is a must on trips out of town. Very practical to avoid wasting the ingredients you have in the fridge, it is very convenient to take with you for a walk, to the beach or for your lunch break at work.
Simply cook the pasta al dente in plenty of boiling salted water, drain it and cool it quickly under running water. While you wait for it to cool down, prepare the sauce: you can choose the ingredients you like best and prepare a vegetarian version, for example using cherry tomatoes, corn, rocket and cubes of cheese, or add canned tuna or of cooked ham. Combine everything by mixing well and pouring a little extra virgin olive oil.
For a more delicious version you can add dried fruit or even fry vegetables in a pan (for example aubergines, peppers and courgettes in summer) and add them to the pasta once everything has cooled down. Store your cold pasta in the fridge in a container with a lid. It will last you at least a couple of days.
